At Sochaccy Coffee Roastery we are constantly interested in coffees from the Brazilian Atlantic Forest, this is for several reasons. Minas Gerais in its eastern part is one of the most traditional growing regions for Brazilian coffee, small coffee farms started to be established there basically from the beginning of coffee history in Brazil. When coffees from Brazil's Minas Gerais were building a worldwide reputation for the importance of Brazilian coffee, then Brazilian coffee accounted for nearly 80% of the world's coffee. We always try to make sure that the Sochaccy.co coffee shop has one or more selections from that part of the world. The coffee-growing region of Minas Gerais is very extensive, covering nearly 275,000 hectares in 63 municipalities and stretching from Espírito Santo and Rio de Janeiro west to the center of the state, including well-known coffee towns such as Manhuaçu, Viçosa, Araponga, Alto Caparáo
The coffee we are pleased to present to you comes from the Santo Antônio Brazilian plantation, located 15 minutes by car from the town of Dom Corrêa in the municipality of Manhuaçu, state of Matas de Minas, about 300 km north of Rio de Janeiro. The plantation crops lie at an altitude of 850 meters above sea level. Fazenda Santo Antônio covers an area of 200 hectares growing the Catuai 144 arabica coffee variety, which is grown by Mauro Luis Heringer, who is the owner. The collected coffee berries are processed with the naturals method, which consists in drying the collected coffee in the sun for 30 days and then removing the top, dried, layer of berries with the help of special mills. The coffee was harvested in June. The farm places great emphasis on sustainability and holds certifications such as Organic and Rainforest Alliance. The plantation is part of the COOPFAM cooperative, which brings together about 250 farmers from across the state of Minas Gerais.
The coffee brings to the fore flavor notes of black ripe cherry, caramel with subtle wine notes of apple. The coffee is characterized by a full body and a subtle citrus acidity.
