We are gradually expanding the presence of coffees from the Guji region of Ethiopia in the coffee shop of Sochaccy Coffee Roastery. This is due to the growing popularity of these coffees among you. As always, we only roast coffees after your order in one of three profiles to choose from, this way you can further enhance your favorite flavor notes in each coffee.
The coffee is named after the largest town, located in the western region of Guji. One of the best processing points for coffee harvested by local farmers in the Guji region was established there. The Bule Hora station distinguishes itself from other processing points with a rigorous protocol for evaluating coffee quality, while also specializing in the method of removing the top part of the berry from the coffee through washing. Coffee is delivered to the point by nearly 600 farmers in the area. The extensive infrastructure ensures that the coffee undergoes meticulous quality control at every stage of processing. The coffee berry buying process is designed to motivate farmers to take even greater care of their coffee bushes. The system involves paying farmers a base price once the coffee is delivered to the buying point. When the coffee reaches a higher price at the auction because of its quality, the farmer receives an additional payment so that he can invest in his crop and turn up at the next harvest with even better coffee. The average size of the farms in the Bule Hora region is around 1.5 to 2 hectares, planted with around 1,500 coffee bushes, very often in the forest. Thus, most of the region's coffees are organic by nature. One bush yields between 100 and 200 gr. of green coffee. The region's Arabica coffee varieties, collectively referred to as Heirloom coffees, are the overwhelming majority. Cultivation is usually carried out by entire families, with plots of land passed down from generation to generation. After being wet-processed, coffee berries are dried on special terraces for 12 to 15 days in the sun.
The plantations where Bule Hora coffee comes from are located at an altitude of 1,800-2,000 meters above sea level. The coffee received 86.50 points on a scale of 1 to 100.
Ethiopia Guji Bule Hora coffee greets us with a beautiful and intense aroma of flowers and a quite unusual combination of flavor notes of apple, chamomile, peach and tomato. We roast our coffee in one of three profiles; light roast, medium roast and dark roast. In the light roast, the coffee has accentuated citrus and peach notes. The medium roast, which as always is recommended at the beginning of an adventure with coffee, provides a beautiful balance of the above described flavor notes. The dark roast brings to the fore notes of chocolate and cocoa. Guji Bule Hora Ethiopia is a great choice as a light roast for pour-over methods and as a medium roast for classic espresso. This coffee comes from the latest harvest.
