Coffee from Ethiopia - Sidamo.
The history of coffee, like so much of history, begins with a legend, and that legend has it that the coffee plant was born in Ethiopia to a goatherd named Kaldi, who discovered its amazing properties. One day, Kaldi noticed that his herd of goats, usually quietly nibbling on scraps of grass and bushes, had become strangely overactive. The goats, already quite advanced for their age, began bouncing around like little kids - a situation that only calmed down after many hours. When he once again came to this pasture he noticed inconspicuous bushes with red cherries, he noticed that the surge of vitality in his herd appears after eating fruit from these bushes. He shared his findings with the abbot of a nearby monastery. The abbot peeled the cherries down to the bean and, after crushing them with a stone, poured boiling water over them. Coffee, thanks to its properties, almost immediately became famous throughout the region. People living in what is now Ethiopia at that time took up coffee farming decades after Kaldi's discovery, the first such attempts taking place on the islands of Lake Tana in northwestern Addis Ababa.
Ethiopia Sidamo, is grown in the Sidamo region, in the southern part of Ethiopia, near Lake Abaya, not far from the capital Addis Ababa. The region is, on the one hand, the cradle of coffee since the very beginning of its discovery by humans, and on the other, famous for the highest quality coffee. In the past, the region belonged to the Kingdom of Sidama, a country whose wealth was created and based precisely on the excellent quality of coffee.
The coffee comes from crops grown in the Sidamo region, located at altitudes between 1500 and 1800 meters above sea level. The growing area is characterized by 50% volcanic soil and 25% sedimentary soil. The crop size is only 500 kg of cherries per hectare. The coffee was harvested between October and December 2017. The coffee plant is exclusively the arabica variety. The ripe coffee fruits are harvested by hand without the use of mechanical or semi-mechanical methods. After harvesting, the coffee is transported to local cooperative processing stations. The top of the coffee cherry is removed using the "washed" method. After washing, the coffee is dried in the sun.
Ethiopia Sidamo is characterized by a distinct citrus and floral aroma, The taste is pleasant herbal notes with an aftertaste of citrus and milk chocolate. The drink offers us a smooth body with good acidity
