Antigua is the oldest and most famous coffee growing region in Guatemala. It was in this region that Jesuit missionaries first planted coffee bushes in 1760. Before the name Antigua appeared, the valley was referred to as Panchoy in the language of the Cachiquel tribe that inhabited the area, which translated means "big lagoon". The valley is shaped by 3 volcanoes "Agua", "Fuego" and "Acatenango". Thanks to the volcanic eruptions, the valley has accumulated soils with an extraordinary concentration of minerals which, together with the high altitude of the mountains and the abundant rainfall, create ideal conditions for the cultivation of high quality coffee (speciality coffee).
The coffee plantations are located on the slopes of a volcano at an altitude of 1500 to 2400 meters above sea level. They grow mainly Bourbon arabica coffees that are harvested from March to August. Due to the high altitude and difficult terrain, harvesting is done by hand in several rounds to ensure the best selection of ripe coffee berries. After harvesting, the coffee undergoes a washing process. The washing is necessary to remove the top part of the berry so that the green coffee beans can be dried. The coffee after washing is dried in special patios where it is covered with a tarp for when it rains. The method of processing through washing gives the coffee bright and robust flavors.
For those of you who have already had your first time together with the richness of freshly roasted coffees, this is a coffee you can drink all day; balanced, smooth. Sweetness comes to the fore, light floral notes full of citrus and silky softness.
