As in most of the world, coffee in India is processed by several methods, the main division being wet-processed coffee and natural-processed coffee. India uses its own unique nomenclature to define the gradation of its coffee. Natural-processed robustas of the highest quality are called Cherry AA grade.
Indian Cherry robusta is one of the most popular high quality robustas added to premium blends and is characterized by its large bean ( sc. 18).
Indian Cherry Robusta Cherry AA comes from family farms located in Sakleshpu and Coorg districts in the state of Karnataka, India. The robusta bushes grew on forested plantations. Coffee is grown on the eastern slopes of the Western Ghats range, a UNESCO World Heritage Site and one of the most biodiverse places in the world with over 5,000 species of flowering plants and 508 different species of birds. Many of these farms have been in operation for nearly a century, passing in the family from generation to generation.
The taste of Robusta coffee is not as appealing as that of Arabica coffee, this is mainly due to the fact that there is twice as much caffeine in Robusta coffee (2.7%) as in Arabica coffee (1.5%). In addition, there are nearly 60% fewer oils in Robusta, which are natural carriers of flavor.
The Robusta bean is rounder, while the Arabica bean is much more elongated. The bush itself is also different, with Arabica bushes usually between 2.5 and 4.5 metres tall. While Robustas are between 4.5 and 6 meters.
The coffee beans have undergone natural processing.
The bean is characterized by a rather intense spicy aroma with notes of herbs, spicy chocolate and bitterness.
