Guatemala Antigua Pastores Freshly Roasted Arabica Grain Coffee
Guatemala is the 6th largest coffee-producing country in the world - a remarkable achievement considering the country's small area, but on the other hand it captures how excellent coffee growing conditions are in Guatemala. Guatemala Pastores coffee comes from the Antigua municipality of the Sacatepéquez district. The municipality of Antigua is a small coffee growing area in Guatemala bounded by the presence of 3 volcanoes. A region with mineral-rich soil and a mild high mountain climate - perfectly suited for growing high mountain arabica coffee with SHB grade beans. The coffee that has graced our coffee roastery and is available in the coffee shop comes from the slopes of the Agua volcano. The plantations are located at an altitude of 1,600 meters above sea level. Most of the coffee crops are small individual farms, usually a few hectares in size, where the coffee is harvested by hand and then transported to processing stations. One such station is Pastores, which has been in operation since the beginning of the last century. It is distinguished by the fact that the entire structure is made of wood.
How does the level of coffee roasting affect its taste?
The level of roasting of coffee, like its freshness (the passage of time from the date of roasting), directly affects its flavor and aroma, making it one of the key stages in coffee production. Light-roasted coffees retain more acidity and fruity notes, which is ideal for lovers of subtler flavors. Medium-roasted coffees offer a harmonious combination of sweetness and richer aroma, revealing notes of chocolate or nuts. Dark-roasted beans, on the other hand, have more intense, bitter flavors that dominate, ideal for those who prefer strong espressos. Arabica Guatemala Antigua Pastores coffee is a high quality coffee due to the care with which it is harvested and processed. Sourced from plantations where Arabica Bourbon and Arabigo coffee varieties are grown, the harvest was processed using the Fully Washed method, which involves removing the top part of the coffee berry's skin by washing. After such washing, the coffee is carefully dried in the sun, exposed on special terraces. The entire harvest is then sorted by hand, so that damaged green coffee beans are removed from the coffee. The care and precision in the processing of this coffee, pays off with an excellent pure taste, free from defects.
We have developed 3 basic roast profiles for the coffee; light roast, medium roast and dark roast. For the preparation of espresso in a pressure machine, we recommend the medium profile. For preparing coffee with pour-over methods, we suggest light roasting.
Guatemala Pastores coffee in the medium roast, is a full-bodied coffee, with sensations of chocolate, hibiscus, sweetness of flowers, jasmine and light bright acidity. The coffee achieved a score of 84.5 points. ( on a scale of 0-100), which qualifies the coffee for the specialty coffee class.
