Ethiopia as it is commonly known is the homeland of coffee, as befits the homeland coffee rules practically indivisibly. Ethiopia is the largest coffee producer in Africa and coffee in Ethiopia accounts for nearly 28% of the economy and jobs for 15 million people. In Ethiopia, coffee plantations are described very differently, mainly because of their peculiarities, they are usually small family plots (so-called garden farms, because the entire coffee farm is located in the farmer's garden). We also have forest, semi-forest crops; which usually means wild coffee growing in the forest. Virtually all over Ethiopia grows wild coffee, which is one of several thousand varieties of arabica; collectively referred to as Heirloom. Coffee grows everywhere and is cultivated everywhere, although often the word "cultivation" simply means harvesting the fruit from the coffee bush. Ethiopian coffee, is usually wet processed and comes from one of the 3 main growing areas; Sidamo, Harrar, Kaffa.

How does the level of coffee roasting affect its taste?
The level of roasting of coffee has a significant impact on its taste, aroma and overall flavor characteristics. Here's how different levels of roasting affect coffee:
1. light roast: Light roasted beans have a light brown color and no oily surface. This roasting allows the beans to retain most of their original flavor characteristics, which depend on the type of coffee and the region it comes from. Light-roasted coffees typically have higher acidity and more pronounced fruity, floral or herbal notes, ideal for pour-over or Aeropress brewing methods.
2 - Medium roast: A medium roast coffee has a darker, browner color and a slightly oily surface. This level of roasting balances acidity with flavor intensity, often bringing out chocolate, nut and caramel notes. This is the most popular roast level, and works well with a variety of coffee preparation methods, from espresso machines to drip.
3 - Dark roast: Dark roasted beans are dark brown to black and have an oily surface. This roasting typically reduces acidity, bringing out stronger, more bitter roasting notes that can dominate the original flavor of the beans. Dark roasted coffees are often used in strong and intense espressos.
