A biosphere reserve is an area of terrestrial ecosystems, though not limited to them, that was created to manage the sustainability of biodiversity conservation and the sustainable use of natural resources. The management of biosphere reserves is based on community participation.
El Triunfo is located in the Sierra Madre de Chiapas mountains, in the south of the state of Chiapas. The Sierra Madre de Chiapas is a mountain range stretching nearly 600 kilometers, and lies in the Cordillera of Central America. El Triunfo occupies a steep and mountainous area of the border between two of the state's largest hydrological regions; the Pacific coast and the Grijalva-Usumacinta River. El Triunfo is the most biologically diverse area of Mexico's evergreen cloud forests. In 1993, UNESCO recognized El Triunfo as an international biosphere reserve. The El Triunfo reserve area has all the conditions for growing the best arabica coffee; abundant rainfall, fertile soil and high altitudes.
Mexico's El Triunfo coffee comes from a small cooperative of farmers living in the reserve, based in Siltepec. The cooperative aims to improve the living standards of the local community in the municipality by improving the quality of the coffee crop. The average size of the cooperative members' plots is less than 3 hectares. The small coffee plots life investment from funds saved while working in the US. The cooperative has expanded its coffee processing infrastructure so that from each plot there is access to a mill, processing coffee, within a maximum of a three-hour drive. The goal is to start processing coffee the day it is picked from the coffee bush. Maintaining such rigor results in preserving the natural freshness of flavor already in a cup of coffee. Each member of the cooperative independently removes the top part of the berry and dries their coffee. Each farmer also independently maintains his own coffee nurseries, setting aside coffee berries from the harvest, for seedlings in subsequent years. The cooperative's plantations lie at altitudes of 1,000 to 1,900 meters above sea level, and the coffee is harvested by hand from December to April. After harvesting, the coffee is processed by washing and then dried in covered patios. The plantation grounds are dominated by arabica coffee varieties Typica, Bourbon, Mundo Novo.
