    Coffee in Mexico has a rich history, dating back to the late 18th century, when the first coffee seedlings arrived in the country via European settlers. Coffee cultivation developed on large plantations, where mostly indigenous Mexicans worked. In the early 20th century, as a result of the revolution and land reform, the structure of coffee cultivation changed. Today's coffee farms in Mexico are mainly small, family-run farms run by indigenous farmers who grow coffee on small acreages, often no more than three hectares. Thanks to the efforts of the Mexican government and the support of community organizations, many of these farmers grow organic coffee, which allows them to produce coffee with exceptional flavor.

    Specialty coffee from Chiapas

    The state of Chiapas, on the southern tip of Mexico, is home to the Jaltenango specialty coffee growing region, where farmers with a multi-generational tradition grow coffee on land between 1,300 and 1,700 meters above sea level. Chiapas is Mexico's most important coffee region, accounting for 40% of the country's production. The region's climate, shaped by its mountainous terrain and proximity to a biosphere reserve, is conducive to the creation of coffees with unique flavor profiles.

After harvesting, which is done by hand, the coffee is transported to state-of-the-art processing stations, where it is fully washed and sun-dried.
