We are pleased to present to you coffee from a unique country in central Africa, located on the Atlantic Ocean; the Gulf of Guinea. Cameroon is a country of diversity - bringing together a wealth of fertile soils - perfect for growing coffee; a rich culture and wonderful landscapes.
Coffee from Cameroon caught our attention a few years ago, on the one hand because of the cultivation, of the acclaimed Java Blue Mountain coffee variety, and on the other because of the extremely good value for money, of this coffee from Africa. Until now, we have usually covered the coffee of the Northwest Department region; Boyo and Sante. Now it is the turn of the Kilum Ijim forest coffee. Cameroon's Kilum Ijim coffee grows adjacent to prehistoric rainforests. The Kilum Ijim Reserve is an area of 20,000 hectares of forest ecosystem, famous for its exceptional biodiversity. The richness of the flora and fauna here is a direct result of the unique amount of minerals in the soil; the slopes of Mount Kilum. All this concentrates in the coffee beans offering us a unique taste of the richness of coffee. The forests are located on the slopes of the Kilum volcano, whose peak at 3,011 meters above sea level is crowned by a huge crater with a lake.
Kilum Ijim AA coffee is 100% arabica, theJava Blue Mountain botanical variety. The coffee plantations spread out at altitudes of 1,600 - 2,000 meters above sea level. The arabica coffee bushes, are grown in Cameroon with the utmost care by farmers, gathered in agricultural cooperatives. Members of the cooperatives share their knowledge and lessons learned - the higher the quality of the coffee harvested, the higher the remuneration for the entire community. This is how, through joint efforts, excellent quality coffees are produced. Farmers on their small plantations maintain the natural character of agriculture, no chemicals are used. Due to the small size of the plantations, the coffee is harvested by hand. The hand harvesting of coffee also ensures that selection can be done right at the stage of picking the coffee berries. After harvesting, the coffee is treated by washing ( washed ), making the flavor notes more unmistakable.
The taste of Cameroon Kilum Ijim Arabica coffee greets us with notes of apricot, while almond and marzipan are also noticeable. It is characterized by a full, dense body and a relatively light, bright, citrusy acidity.
What effect does the level of coffee roast have on the taste?
The level of roasting of a coffee significantly affects its flavor and aroma. Light roasted beans retain most of their natural acids, which translates into bright and distinctive flavor profiles with fruity notes. Medium-roasted beans will develop sweeter accents, such as chocolate and caramel, offering a more balanced flavor. Darker roasted beans feature intense, deep flavors with dominant dark chocolate tones.
