    Coffee from Colombia - Supreme Coffee, Huila Region

    Colombia Huila Supremo EP Fair Trade coffee comes from southwestern Colombia, from the area around the city of San Augustin - small family farms located in the coffee-intensive Huila region of Colombia. The region is characterized by distinctly different wet and dry seasons, which have an impact on both the harvesting process and the subsequent drying of the coffee. The combination of high altitude, good irrigation and volcanic soil makes it the best starting point for your coffee adventure in Colombia. The main harvest takes place between April and August and the secondary harvest between December and February (the so-called "small" harvest). The owners of small coffee farms usually remove the top part of the coffee tree using the "washed" method at their local processing stations, called mills. After the top of the coffee cherry is removed, the coffee is dried in the sun. The coffee is put out on special raised beds lined with mesh so that air can reach the beans from below.

    The term Supremo is the name given to coffee beans of a certain size (scr 18+). Supremo coffee beans are the category of largest beans in Colombian coffees, after Maragogype. Supremo coffee beans go through a stricter quality selection than the Colombia Excelso coffee beans, they can come from a single plantation or even the same tree. Usually the larger beans are perceived as higher quality and there are fewer of them than the smaller beans, so Colombia Supremo is often considered a higher quality coffee. The very word Supremo in Latin means Supreme.

    The plantations from which Supremo coffee comes are located at altitudes of over 1,800 meters above sea level. The area is planted with Caturra and Typica varieties.

    A rich sweet aroma of chocolate. Tasting notes of toffee, peach, apricot. Medium lime (bright) acidity with good body. Sweet, fruity finish - well-balanced coffee.
