EthiopiaSelect Sidamo is an extraordinary coffee from the heart of the Sidamo region, located in southern Ethiopia in the Great African Trench, about 270 km from Addis Ababa. Grown on fertile volcanic soils near Shefina, Dale in the SNNPR region, it is the result of the work of 1,099 small farms. The plantations are located at altitudes ranging from 1,850 to 1,930 meters above sea level, which gives the coffee beans their unique character and depth of flavor.
The coffee comes from local Heirloom varieties, known for their rich aromas and flavors. Harvesting takes place from October to December, and the ripe coffee cherries are carefully hand-picked by local farmers. They are then taken to the Dale Shefina processing station, where they undergo a full washing and drying process on raised beds. Fermentation takes about 72 hours and drying takes another 14 days, ensuring the beans' high quality and purity.
