To paraphrase Willie Dixon, it can be said that Ethiopian coffee is the roots, the coffee of the rest of the world is the fruit. Ethiopia is considered the cradle of coffee, and the genetic richness of Ethiopia's Coffea Arabica coffee varieties is a key factor that makes it extremely unique from other coffees in the world. It is estimated that more than 90% of the genetic material of the plant is found right here in Ethiopia. This genetic diversity translates into a wide spectrum of flavors that can surprise even the most sophisticated coffee connoisseur.

The history of Ethiopian coffee can be traced back to the time when other regions of the world began cultivating coffee using a few plants stolen from Yemen. In contrast, Ethiopia has preserved its natural diversity, allowing it to produce coffees that offer complex flavor profiles ranging from distinctly acidic to subtly sweet and floral notes. This genetic heritage makes each cup of Ethiopian coffee a unique experience that delights in its uniqueness and diversity.

Reserved Sochaccy's Ethiopia comes from Yirgacheffee. The coffee is supplied to the local mill by some 800 small farmers in the area. The coffee cherries are sorted and processed naturally. After picking only the most ripe cherries, they are dried for about 15-20 days in the sun on so-called "African drying beds." During the day, the cherries are constantly rotated to ensure an even drying process. During the drying process, the fruit sugars from the pulp are partially absorbed by the beans, resulting in the typical fruity and sweet taste of this coffee.

Reserved Sochaccy's Ethiopia Reserved bean coffee is the highest-end coffee from Ethiopia available in our coffee roaster and coffee shop, and it's not just the physical characteristics of the green bean but also the coffee's sensory qualities expressed in the coffee's high point rating, placing it in the highest segment of specialty coffees from Ethiopia.

The coffee greets us with a light sweet citrus acidity, a round and silky body. There are notes of milk and strawberries, ripe lychee peaches.
