Meet the Coffee from Ethiopia - Sidamo

The history of coffee, like many ancient stories, begins with a legend and so the legend has it that Ethiopia is the homeland of coffee, and the amazing properties of coffee beans were discovered by a goat herder, Kaldi. One day, Kaldi noticed that his herd of goats, usually calmly nibbling on the remnants of grass and bushes, began to show strange overactivity. The goats, quite advanced in age, started frolicking like, not to put too fine a point on it, little kids—the situation calmed down only after many hours. When he visited the pasture again, he spotted inconspicuous bushes with red cherries, and noticed that the surge of vital energy in his herd appeared after eating the fruits from these bushes. He shared his observations with the abbot of a nearby monastery. The abbot pitted the cherries down to the seeds, crushed them with a stone, and poured boiling water over them, thus brewing the first coffee. Thanks to its properties, coffee almost instantly became famous in the entire region. People, living in the area of present-day Ethiopia, undertook the cultivation of coffee a few dozen years after Kaldi’s discovery, with the first attempts taking place on the islands of Lake Tana in the north-western part of Addis Ababa.

Ethiopia Sidamo is grown in the Sidamo region, in the southern part of Ethiopia, near Lake Abaya, not far from the capital Addis Ababa. The region is, on one hand, the cradle of coffee since its discovery for mankind, and on the other hand, it is famous for the highest quality coffee. In the past, this region belonged to the Kingdom of Sidama, a state whose wealth was based precisely on the excellent quality of coffee.

The coffee comes from crops in the Sidamo region, located at elevations from 1500 to 1800 meters above sea level. The crop area is characterized by a 50% share of volcanic soil and a 25% share of sedimentary soils. The size of the crops is merely 500 kg of cherries per hectare. The coffee was harvested from October to December 2017. The coffee plant is exclusively the arabica variety. Mature coffee fruits are hand-picked without the use of mechanical or semi-mechanical methods. After harvesting, the coffee is transported to local cooperative processing stations. The outer part of the coffee cherries is removed by the “washed” method, that is, by washing. After washing, the coffee is sun-dried.

Ethiopia Sidamo is characterized by a distinct citrus-floral aroma. The taste reveals pleasant herbal notes with hints of citrus and milk chocolate. The beverage offers us a smooth body with good acidity.
