In the southern part of Ethiopia, about 400 kilometers south of Addis Ababa, lies the famous Yirgacheffe region. This area, located in the Gedeo Zone, is known for its exceptional coffee. The name Yirgacheffe refers to the zone's capital. Despite the passage of time, the region has retained its remarkable biodiversity, resulting in coffee that continually surprises with its complexity and depth.
Yirgacheffe's hilly terrain, stable temperatures and nutrient-rich soil contribute to the slow and steady ripening of the coffee cherry. This natural process allows the beans to develop a complex flavor profile that is truly unique. Coffee in this region is mainly grown by small farmers on small farms of 0.5 to 1 hectare. The red volcanic soil provides the plants with essential nutrients, which promotes the development of the coffee's floral flavor profile.
Harvesting: Family Labor
Yirgacheffe's harvest season runs during the winter months, from October to January, which is relatively late compared to other washed coffee-producing regions. This harvest time is partly due to the high altitudes at which the coffee grows, from 1,800 to 2,000 meters above sea level. The coffee cherries are carefully hand-picked by families of small farmers, ensuring that only the best cherries are selected.
After harvest, the fresh coffee cherries are pre-sorted in alluvial channels and then delivered to the cooperative, where they are processed using the wet method. The commitment and attention to detail at every stage of the process are evident in the final product - coffee that stands out for its exceptional quality and taste.
