History of Coffee in Hawaii
The origins of coffee in Hawaii date back to 1813, when the first seedlings were brought to the island of Oahu by Don Francisco de Paula Marin. Although the first attempts at cultivation were unsuccessful, in 1828 Reverend Samuel Ruggles moved some seedlings to the Kona region of the Big Island, where the soil, altitude and climatic conditions proved ideal for coffee. This began the development of the coffee industry, which rose to prominence in the 19th century.
The uniqueness of the Hawaii Kona Region
Kona, located on the western slopes of the Hualalai and Mauna Loa volcanoes, offers ideal conditions for growing coffee. This 20-mile zone, known as the "Kona Coffee Belt," is characterized by shelter from the trade winds, regular rainfall and fertile volcanic soil. All this creates an ideal environment for Kona coffee, whose beans are known for their rich, full-bodied flavor with floral, citrus and berry notes.
Growing and Harvesting Process
Kona coffee is usually grown from cuttings to ensure healthy and suitable plants. Coffee trees begin to produce fruit after three to four years. Harvesting is done by hand to selectively pick only ripe fruit. This careful harvesting process guarantees the highest quality beans, as unripe fruit is left on the tree to ripen further.
Processing and Roasting
Once harvested, the coffee beans are processed using the wet process, which is preferred in the humid climate of the Kona region. This process involves the removal of the pulp from the coffee fruit, fermentation and drying, which preserves the full flavor and aroma of the beans. At our roastery, the beans are carefully selected and then roasted to bring out their unique flavor profile.
